Stocks Hotel on the unique and beautiful island of Sark are recruiting now for a Sous Chef.

Stocks is a historic farmhouse hotel located in the centre of the unique Channel Island of Sark. The hotel has been sympathetically refurbished and is renowned for serving modern British cuisine in unspoilt natural surroundings. Stocks has two restaurants; one fine dining room and a popular poolside Bistro. This year we were are awarded 4 AA Stars and 2 Rosettes.

We are looking for an enthusiastic Sous Chef to join our small, high quality kitchen brigade. Previous experience within a fine dining or a 5-star hotel environment is essential. The successful candidate will be required to support the head chef with the day to day running of the kitchen and will be in charge of the kitchen in his absence. The ideal Sous Chef will be highly motivated and must demonstrate a genuine passion for working with good quality, fresh ingredients. They must possess strong leadership skills and have the knowledge and ability to work in every section of our small but busy kitchen. They must appreciate the importance of food stock control and gross profit margins associated with menu planning, food purchasing, staff training & supervision, and food safety requirements. The position would suit a good Junior Sous Chef looking to further their career. 

We are offering a competitive, tax-free salary package that includes superb accommodation, free meals, free laundry service and basic medical insurance. Requirements

  • Must be used to working with fresh, ethically sourced, high quality produce, including local fish, meat and shellfish.
  • Must be passionate about using first class produce.
  • Proven ability to prepare & cook honest, sensible and imaginative menus.
  • Must have a proven record in good kitchen management.
  • Must have a valid food and health & hygiene qualification and certificates.
  • Must be able to plan interesting menus, source fresh ingredients and deliver superb quality food on a daily basis using essentially seasonal and local produce.
  • Must understand and speak fluent English and must possess a valid UK Visa and work permit.
