Stocks Hotel on the beautiful island of Sark are recruiting for a Head Chef for 2017 and beyond - preferably for a 3 to 5 year contract.

Stocks Hotel is a high quality luxury country house hotel on the Island of Sark.  Owned privately by a local family the hotel re-opened in 2011 following a major refurbishment of the entire hotel, including the kitchen, and since that time has achieved its ranking of the top hotel on Sark, and the second hotel in the entire Channel Islands on Trip Advisor.

The hotel is currently looking for an experienced and dedicated head chef to lead the small, high quality kitchen brigade and to continue to develop the cuisine for which the hotel has gained a fantastic reputation.  

The hotel’s two outlets include a fine dining restaurant used for breakfast and dinner and a poolside brasserie / bistro style operation offering more relaxed lunchtime food and informal evening meals.  

The hotel is also developing substantial permaculture / organic gardens to provide local produce for the hotel to accompany the local Sark or Guernsey based suppliers of fresh fish, shellfish, meat and vegetables.  

This hotel also attracts some function business including a small number of weddings ranging from 6 to 120 guests and corporate functions / private board away days and private family functions.

This position is a live-in position with free accommodation. Due to the size of the Island this position would ideally suit a couple where work in the hotel could also be made available to the head chef’s partner, either in the kitchen if suitably qualified, or elsewhere in the hotel, on either a full or part-time basis.

Requirements

Our Head Chef needs to be highly passionate about food, and enthusiastic, hard working and have highly developed technical skills.  Our head chef should have worked in a similar fine dining establishment in the past which will have had an emphasis on first class local ingredients.  Our head chef should have an ability to lead a brigade of chefs in a clear, calm, organised and guiding manner and be able to work closely with the other heads of department, and with the owners’ passion for locally grown and sourced ingredients.

In addition to being a working Head Chef, you will have responsibility for stock control, Health & Safety, Food Hygiene initiatives and maintaining the gross profit percentage targets.
